i like this..its called dirt cake. its not really unusual more than it is fun. my family has this one alot of peoples birthdays.

    Ingredients
1-1/2 to 2 pounds chocolate sandwich cookies (like Oreos®)
    1/4 pound (1 stick) margarine
4 packages instant chocolate pudding (made according to directions)
12 ounces non-dairy whipped topping (like Cool Whip®)
    Candy gummy worms

    Instructions
Clean a new plastic flower pot (a rectangular window box is perfect) and a gardening shovel or trowel. Crush the cookies in a food processor or place them in a ziplock bag and use a rolling pin. The crumbs will resemble potting soil. Mix crumbs with melted margarine and make a 2-inch crust on the bottom of the flower pot. Combine the pudding and whipped topping, then spread on the crust. Put gummy worms on the pudding and spread the remaining crumbs on top. You can arrange some of the gummy worms so that their heads poke out of the “soil”. Refrigerate overnight. Wrap the stems of some artificial flowers with foil and arrange in the pot, then serve the cake using the trowel.

    1-(8oz.) tub cool whip
    1/2 cup toasted almonds

spread apricot preserves on baked cake, then cut cake into cubes. in a large glass bowl add a layer of cake, then pudding, then cherry pie filling, then a layer of preserves, repeat steps above then garnish with cool whip and almonds.
this is a beautiful dessert and it is sooooo good.
one tip for you is when you are layering the trifle make sure you can see a bit of every layer, i actually place the cherries one by one around the outside of the bowl so that the layer is visible.

    Baked onions with vegetarian haggis

    6 medium unpeeled onions, trimmed
    50g sunflower margarine
    50g organic rolled oats
    50g pinhead oatmeal
    50g chopped mixed nuts
    1 onion, finely chopped
    100g mushrooms, finely chopped
    1 carrot, finely chopped
200g can red kidney beans, drained and chopped
    50g vegetable suet
    1 teaspoon yeast extract
    1 teaspoon ground black pepper
2 tbs. chopped mixed fresh herbs
    pinch of grated nutmeg
    juice of 1 lime
    1 tbs. whisky
    seasoning
chopped fresh chives and parsley, to garnish

Cut a slither from the bottom of each of the onions, so that they stand upright. Cut a cross in the top about three quarters of the way down. Place in a large pan, cover with cold water and bring to the boil. Simmer for 15 minutes, drain and refresh under cold water.

Preheat the oven to 190C (375F). To make the haggis, melt the margarine in a pan and add the oats, oatmeal and nuts. Cook over a gentle heat, stirring, for about 3 minutes until toasted and golden. Transfer to a bowl.

Melt remaining margarine, add the onion, mushrooms and carrot and cook gently for 5 minutes until softened. Stir into the toasted oat mixture with the remaining haggis ingredients. Season.

Snip out the center of the onions with kitchen scissors, leaving the skin and 3-4 outer layers intact. Stuff with haggis and bake for 40 minutes.

    Serves 6.

    mango salsa

    one lime
    garlic, chopped
    freshly cracked black pepper
chili sauce or one fresh red chili pepper, seeded and finely chopped -sambal oelek chili paste is great-
one mango, peeled seeded and chopped

juice the mango and the lime into a bowl. it’s easiest to slice the flesh off of the mango after peeling and just squeeze the pit until the liquid runs off. careful! the pit may want to leap right out of your hands and fly across the counter. add the chopped garlic, black pepper and chili to suit your taste.

this condiment works very well with thai foods and as a garnish for sushi tuna in tiny amounts.

    enjoy!
